midnight snack

Here's something I usually eat late at night. Just a half cup of cottage cheese with one or two servings of fruit - this time I went with some strawberries and blackberries. The slow digesting proteins in the cheese and the low glycemic index of the fruit make this a great snack before bed.

  1. Larry, I think you mean low glycemic load, as fruits have quite a high glycemic index.

  2. A glycemic index of <40 is pretty low, actually. A great way to get carbs and not have an insulin spike right before bed!
