Tzatziki!

Here's a recipe for traditional tzatziki straight from a Greek restaurant owner. Good stuff. Warning, traditional means there is quite a garlic kick. It's relatively easy to make and requires very few ingredients. Also, this stuff lasts in the fridge for a long time so you don't have to worry about it spoiling.

1 tub Balkan natural yogurt (or any other brand, but Balkan is best)
-strain overnight and toss liquid (or, you can save the whey and use in other recipes!)

To strained yogurt, add:
1 long english cucumber grated and squeezed out of most liquid
1 head of garlic, pressed (this is strong; I usually use 3-4 cloves)
juice of 1 lemon
pepper to taste

-it tastes best if left to sit overnight. the flavors will meld nicely. serve with crackers, pita, veggies, or whathaveyou,.

midnight snack

Here's something I usually eat late at night. Just a half cup of cottage cheese with one or two servings of fruit - this time I went with some strawberries and blackberries. The slow digesting proteins in the cheese and the low glycemic index of the fruit make this a great snack before bed.
